Recipe Green Soup
Healthy, creamy & deliciousThis Green Soup is one of my favourites and we eat it almost every week. It is just an easy way to eat a lot of vegetables at once, because the soup is packed with different types of green vegetables, such as broccoli, zucchini and leek. Avocado gives this soup itβs creamy, delicious taste. The soup is easy to make, very healthy and it tastes great! Get your greens in and try out this recipe.

What goes in my creamy Green Soup?

Ingredients for 4 people:
1 onion
1 leek
1 broccoli
1 zucchini
1 avocado
1/2 bunch fresh parsley
1 small piece turmeric
1 small piece ginger of 1 cm
1 liter vegetable stock
1 teaspoon paprika
1 teaspoon coriander
1/2 teaspoon chili pepper
black pepper
salt

How to make Green Soup
How to make this green soup step by step in 25 minutes:
Step 1
Boil water in the kettle and prepare the vegetable stock of 1 liter. Cut the onion in small pieces. Peal and cut the ginger and turmeric. Wash and chop the broccoli heads, zucchini, and leek. Remove the parsley tops and wash them thoroughly. Finally, peel the avocado and carefully remove the pit.
Step 2
Add olive oil to the pan. SautΓ© the onions and leek until they are glazed. Then add the vegetable stock (about 1 liter). Add the broccoli, zucchini, parsley, turmeric and ginger to the pan (the vegetables should be covered with water, so add more water and stock if necessary).
Step 3
The next step is to add the spices: paprika, coriander, chili pepper, black pepper and salt.
Step 4
Cook everything until the vegetables are done (about 5 minutes, so that the good nutrients in the vegetables are preserved). Are the vegetables done? Then remove the pan from the heat, add the avocado and puree everything. Add salt and pepper to taste.
